Princess's Yummy Carrot Cake

You know we go to the Salt Lake County fair every year and wander the booths and enjoy the animals and other entries. And every year Princess says, "I could have made a cake like that..." or "Why didn't I enter my biscuits this year?"

So the County Fair starts this week and on Monday night rather than just complain about it, she decided to do something about it. We pulled up the requirements for entering the fair (something I always did growing up in Sanpete county), and she was disappointed to see that the deadline for baked goods was Tuesday at noon. She just didn't feel prepared to put something together that quickly.

Then she read the rules.

This was her last year as a 17-year-old to be part of the "Teen" division. So even though it was late, and we were out of walnuts, she vowed to crawl out of bed early this morning and make her absolutely amazing carrot cake!

I told her I would finance the idea, but getting up that early was not my style, besides, she can drive...

By 10:00 this morning, she had her cakes out of the oven and her frosting made. That's when she decided it was time to read the rules again. They specifically called for a single layer cake, no frosting! She was a little disappointed since her cream cheese coconut frosting was fabulous, but she took it in stride and I helped her wrap a single layer and we put it in the fridge to cool until 11:40. We figured that was the closest we dared get before we delivered it to the fairgrounds which are only 3 minutes from our house.

When we walked into the building, there was all kinds of activity as people were busy setting up booths and checking in various goods. We found the food booth easily and filled out the paperwork. The lady in charge seemed surprised when we told her that the rules specifically forbid frosting and she said she would have to make sure that got changed for next year.

When we got back home, Princess frosted the other layer of her cake and we all had an amazing slice. I will let you know how she does, but I'm thinking blue ribbon for sure!

You're lucky! Carrot cake is the best. I like it way better than that yucky Celery cake!

Of course she'll get a blue ribbon! Her cooking is amazing!
